‘A rooftop bar is an absolute must for the Sphinxkwartier!’ Pieter van Veldhoven doesn’t have a doubt about it. Together with Rob Dresen he runs the Bold Rooftopbar op top of the Eiffel building. ‘The Sphinxkwartier projects an international allure that creates a dynamic that is unique to Maastricht. And that ambiance calls for a rooftop bar as seen in all the big cities across the world. With Bold we strengthen the international appeal of the Sphinxkwartier and offer a unique place of entertainment for residents and visitors.
What can visitors expect from Bold Rooftopbar?
‘Visitors can join us for a delicious lunch, a mid-afternoon appetizer, or a lavish dinner up until 9:30 PM,’ says Pieter. ‘Our menu is all about social food: food that you share with each other. This creates a cosy ambiance and encourages people to interact with each other. Another advantage of this concept is that you can taste more dishes this way.’ The drinks menu is also extensive. ‘Guests can decide how much they want to spend on drinks, as we offer beer, wine, and cocktails in different price classes.’ The interior design of the Bold Rooftopbar is just as important to Rob and Pieter as high-quality food and drinks. ‘We have space for 100 guests and we want to give each of them a comfortable place to sit. The Rooftopbar has been decorated with warm colours and velvet cushions. The bar and terraces blend together seamlessly. The focus is on the view: that is something that all guests can enjoy to the fullest.’
What is your goal for Bold Rooftopbar?
‘That guests make the conscious choice to come to us, because they know that we offer a unique experience in a unique location.’ Pieter prefers clarity: ‘Bold stands for being brazen and having an open mind. We offer a classic style with a unique twist and wow our guests with a special and unconventional concept. In the coming months we’ll discover how we propose to define this further in daily practice. The most important thing is that we give Maastricht a spectacular new concept!’
Pieter van Veldhoven and Rob Dresen
Both Pieter and Rob have the restaurant industry in their DNA. Pieter ran the cocktail catering company Shake and Serve and is a co-owner of Mr. Smith cocktail bar in Rechtstraat. Rob Dresen is of a similar calibre and is known from Brasserie Appart, Trash de Luxe Hotel, and the Rebelle event venue located in the former Augustijnenkerk church. Bold Rooftopbar presents a new adventure that both men are ready to take on.
